Our dominant 2018 Cabernet Sauvignon component was machine picked, sorted, de-stemmed and crushed, followed by cold soaking, alcoholic fermentation, extended maceration, then malolactic fermentation. Pressing before starting aging in oenotanks by early January 2019. Two small 2018 Lodi Cabernet Sauvignon lots totaling 15.15% from trusted growers known industry-wide for the price/value ratio of their wines, balance the blend's acidity and further rounds out the wine's mid-palate. Final blend, including a small piece of Petite Sirah, was assembled just prior to bottling.
