Our base material Merlot was machine picked September 24, 2018, sorted, de-stemmed & crushed, followed by cold soaking, alcoholic fermentation, extended maceration, then malolactic fermentation. Pressing before starting aging in oenotanks early January 2019. Our Petite Sirah component was machine picked October 16 & October 23, sorted, de-stemmed & crushed, followed by cold soaking, alcoholic fermentation, extended maceration, then malolactic fermentation. Pressing before starting aging in oenotanks early January 2019. A portion of both Petite lots remained in stainless steel to preserve this fruit's freshness. Two small lots of Cabernet Sauvignon and Merlot came from trusted growers known industry-wide for the price/value ratios of their wines temper the final blend's herbaceousness, bring out the Merlot varietal fruit a bit more and round out the wine's mid-palate. Final blend was assembled just prior to bottling.
