De-stemming, crushing then cold-soaking for 4 days at 10 degrees Celsius. 10 day alcoholic fermentation at 25-27 degrees Celsius with pump-overs and daily cap break downs. Select local yeasts coax naturally occurring malolactic fermentation. 4 months barrel aging in neutral French & American oak.
