Summertime is here. Who wants to hover over a hot stove top when you can set meat and veggies in the oven and bask in the breeze, with a glass of wine, on your patio while a complete dinner cooks itself? Wine Guide Ashleigh Campbell has four of her favorite go-to summer sheet pan dinners to save you time … for more wine and people time.

The hardest part of being an adult is deciding what’s for dinner every single night for the rest of your life. And then, once you decide what you’re going to make, you have to find the time to make it. With work, kids, homework, and sports, I usually need dinner to appear at the snap of my fingers (or Wanda Maximoff’s ability to do stuff with her mind).

Enter sheet pan dinners. Toss everything on the sheet, throw it in the oven and in 20-40 minutes, you have dinner, with little mess to clean up afterwards. Here are four delicious sheet pan dinners the whole family will love that pair nicely with your favorite wines.

Lemon Garlic Salmon

Salmon is delicious on its own or cooked in a sauce. This lemon garlic sauce in this recipe from Sweet C’s is perfectly balanced to let all the flavors shine. Even my 5-year-old, who would eat pizza all day every day if I let him, likes this dish. It pairs beautifully with a chilled glass of Jitterbug Sauvignon Blanc! The lemon sauce balances the acidity of the wine and brings out the citrus flavors in the wine.

Sheet Pan Shrimp Scampi

Zucchini, summer squash and Rosé are in season now, so why not pair them together for an easy summer dinner! After making this recipe for Sheet Pan Shrimp Scampi from Food Network, I don’t think I’ll ever go back to stove top shrimp scampi. It’s so easy and flavorful! It’s not as heavily saucy as a typical shrimp scampi, making it a perfect light summer meal. Grab a glass of our new Pearls and Kicks Rosé with this dish. It’s a medium-bodied Rosé that complements both the shrimp and roasted veggies nicely.

Salsa Chicken Fajitas

I found this recipe from Tasty when looking for some easy lunch prep for work, but adapted it for quick dinners. The salsa keeps the chicken juicy while the peppers and onions roast. We’ve used this as fajitas, rice bowls, and over a bed of lettuce for a nice fajita salad. Our Double Gold-rated Cucharón Red Blend from Argentina is perfect for this dish! The medium body is well suited for chicken, and the salsa is a nice balance to the herbs and spices in the wine.
