Winemaking
Grapes are hand picked and hand sorted. Once de-stemmed at the winery they are very gently pressed so the berry skin is barely cut—this preserves the whole berry as much as possible for a longer fermentation with healthy fruit. Juice spends time in big old barrels, then pumped to other stainless steel tanks where it ages for up to 6 months.

We found an exciting new partnership with an Umbrian grower, with a mission in the production of fine wines, preserving through time the historical indigenous vines such as Grechetto, Sangiovese, and Sagrantino. This is an Umbrian variation on the neighboring region's?Super-Tuscan blend, and includes local Sangiovese plus very local Sagrantino, blended with Merlot, yielding a rich Italian red to pair with red meats or decadent chocolate desserts.?
