Winemaking
Paso Robles Viognier grapes were picked then fermented in two lots—one aged on-the-lees in stainless steel, the second aged in oenotanks. 2018 Chardonnay grapes were picked, fermented then underwent malolactic fermentation in stainless steel. Half was aged on-the-lees in stainless steel, half in oenotanks. The 2017 Lodi Viognier component was better than any 2018 lot in terms of fruit extraction and complexity at the volume we were searching for. The "beyond tiny" 2018 Lodi Viognier refreshens the blend. The 2018 Lodi Chardonnay component is a nod to old-school California Chardonnays, buttery & toasty. Final blend was assembled just prior to bottling.
