Veggie & Bean Salsa
This recipe is fit for a crowd and packed with veggies and beans! Wine Guide Melissa Kapper, who shared this recipe with us, says, “It’s not overly spicy, my kids love it, it makes a TON, and it keeps for a week or so in an airtight container in the fridge.”

Ingredients
1 can each:
mixed veggies, drained
Mexican corn, drained
pinto beans, rinsed
cannellini beans or chickpeas, rinsed
black beans, rinsed
diced tomatoes with chilis
2 tomatoes, diced
1 small onion, diced
1 red pepper, diced
1-2 jalapeños, seeded and diced
1 handful cilantro, chopped
1 bottle Italian dressing
Directions
Prep all ingredients and combine in a bowl. Melissa adds a bottle of Italian dressing for a zesty way to bring it all together. Serve with tortilla chips.
3-Ingredient Fruit Salsa

Ingredients
1 green apple, cored and roughly chopped
1 quart strawberries, hulled
2 kiwis, peeled and halved
Directions
Pulse ingredients in a food processor to desired consistency, and serve with cinnamon-sugar pita chips.
Fresh Cherry Salsa

Ingredients
1/2 cup red pepper jelly
1 tablespoon lime zest
1/4 cup fresh lime juice
1/4 teaspoon dried crushed red pepper
2 cups pitted, coarsely chopped fresh cherries
3/4 cup diced fresh nectarines
1/3 cup chopped fresh cilantro
1/3 cup chopped fresh chives
Directions
Whisk together red pepper jelly, lime zest, lime juice, and dried crushed red pepper in a small bowl. Stir in cherries, nectarines, cilantro, and chives.
